Chocolate covered strawberries are my favorite Valentine’s Day dessert. It is the perfect balance between fun, freshness, luxury and complete simplicity at the same time. I love how the rich chocolate layer gives way to the sweet, juicy berries inside.

You’ll see them in grocery stores and chocolate shops around the holiday, but for a fun project (and the best deal), learn how to make chocolate covered strawberries at home! I’ll share my favorite recipe for chocolate covered strawberries below, along with my best tips for success.

How to make chocolate covered strawberries

You need 3 simple ingredients to prepare this easy chocolate covered strawberries recipe:

  1. Fresh strawberries
  2. Chocolate chips -I love the rich flavor of the dark chocolate chips here, but feel free to use milk chocolate if you prefer. Chopped chocolate chips or baker’s chocolate will also work well. To make this recipe vegan, use dairy-free chocolate.
  3. Coconut oil – Gives the chocolate a little extra shine and the perfect texture. They still freeze in the refrigerator, but are a little soft so they won’t break off and fall out of the strawberries when you bite into them.

How to melt chocolate

The first step in this recipe is to melt the chocolate and coconut oil together. You have two options for how to do this:

  1. In a double boiler on the stove: Fill a saucepan with an inch of water. Simmer over medium heat then place a heatproof bowl on top. Mix the chocolate and coconut oil in the bowl and let them melt, stirring occasionally, until the chocolate is melted and smooth.
  2. In the microwave: Mix the chocolate and coconut oil in a microwave-safe bowl. Microwave for 1 to 3 minutes, stirring every 20 seconds, or until chocolate is melted and smooth.

Dip the strawberries into the chocolate mixture one by one, holding them by the stem so you can cover them on all sides. (You can also pierce the top with a toothpick if the leaves are very delicate.)

Spread it in a single layer on a baking tray lined with parchment paper, then put it in the refrigerator until it sets.

  • Make sure the strawberries are completely dry. If there is any moisture on it, it may cause the chocolate to freeze. After I wash them, I pat them dry, then leave them at room temperature for 15 minutes or so until they’re completely dry.
  • Dress them up. These chocolate-covered strawberries are delicious and simple, but you can decorate them with additional toppings, too. Immediately after dipping the chocolate, while it is still melting, sprinkle with shredded coconut or ground nuts like pecans. You can also make a white chocolate drizzle by melting 1/2 cup white chocolate chips with 1/2 teaspoon coconut oil. Pour it over the berries after the chocolate has set, then refrigerate it until it sets.

Chocolate covered strawberries are best the day they are made. I recommend storing it in the refrigerator until ready to serve.

Furthermore, you can store them in the refrigerator for a day or two, but the strawberries will become softer and more mushy over time. If you are serving it for a special occasion, I would definitely recommend making it on her day.

Can you freeze chocolate covered strawberries?

I don’t recommend freezing chocolate-covered strawberries. The berries will be very soft and mushy once they thaw.

  • Cover a baking tray with parchment paper.

  • Wash the strawberries and dry them completely. The strawberries must be completely dry for the chocolate to stick to them.

  • Fill a small saucepan with 1 inch of water. Simmer over medium heat, reducing heat as needed to maintain a gentle simmer. In a medium heat bowl, combine the chocolate chips and coconut oil. Place over the pot to create a double boiler and let the chocolate melt, stirring occasionally, until smooth.*

  • Hold each strawberry by the leaf, then dip it in the melted chocolate, rotating it to completely cover the sides. Let the excess chocolate drip back into the bowl, then place the strawberries on the baking sheet. Repeat with remaining strawberries.

  • Place in the refrigerator for 30 minutes, or until firm.
