I grew up eating breakfast burritos when I was camping with my family amazing Have you forgotten how good they are! Protein packed breakfast burritos are very good. You can make them fresh in the morning while your kids are getting dressed or you can make the filling the night before and pop it in the microwave the next morning! This is a great recipe for busy mornings!

How to make kid-friendly breakfast burritos
First, scramble your eggs! I like to crack all my eggs in a bowl beforehand just to make sure I don’t accidentally let the shell get into the bowl! Add your milk and any salt and pepper you want and with the measuring bowl/Pyrex cup, stir in the cooking whisk. Then pour into your pan and scramble! Everyone has their own tricks for making scrambled eggs, and mine is: 1. Don’t let the pan get too hot! 2. Fold/stir the eggs constantly. 3. Don’t overcook it!

What do you put on a breakfast burrito?
To prepare the filling, simply discard the cooked eggs and use the same pan to save time washing dishes. Add meat, spices and onions to the pan! Break up the meat with a wooden spoon or spatula and leave until cooked.

Then you’ll add the drained and rinsed black beans and the drained rotelle! I dried my Rotel because I didn’t want to add too much moisture to the filling…no one likes a soggy burrito!

Then the cooked eggs and stir well! You can taste it and adjust the seasoning if you like! If you are making this for yourself or another adult, you can add flavor by adding hot sauce or red pepper flakes!

I melted cheese in my tortillas to help them stick together as I rolled them.

Place a large skillet over medium heat and coat with nonstick cooking spray. In a medium bowl, whisk eggs, milk, and salt.

Add the eggs to the hot pan and whisk. Once cooked, remove them from the pan.

Using the same skillet, add the ground turkey and taco seasoning. Use a wooden spoon to cut the meat into small pieces. Add the chopped onions and continue cooking and stirring until the meat is cooked.

Drain and rinse the black beans and add to the pan. Drain the tomatoes and add them to the pan. Stir and heat.

Add chopped spinach and cooked eggs. Stir until combined and remove the pan from the heat.

Warm the tortillas in the microwave so they can easily be rolled up and sprinkle with grated cheese. Place a small amount of filling along the middle and then roll it into a burrito shape. Warm service!
